- 2 ripe bananas
- 1 cup grated carrots
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the bananas.
- Add the grated carrots, sugars, oil, eggs, and vanilla, and mix well.
- In another bowl, combine the dry ingredients: baking soda, baking powder, salt, cinnamon, and flour.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Fold in the walnuts if using.
- Pour the batter into a greased loaf pan.
- Bake for 55-65 minutes, or until a toothpick comes out clean.
- Let cool before slicing and serving.
Notes
- For a richer flavor, let the bread sit overnight before serving.
- This bread can be frozen for up to 3 months.
