Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas.
  3. Add the grated carrots, sugars, oil, eggs, and vanilla, and mix well.
  4. In another bowl, combine the dry ingredients: baking soda, baking powder, salt, cinnamon, and flour.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the walnuts if using.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 55-65 minutes, or until a toothpick comes out clean.
  9. Let cool before slicing and serving.
