Description

These Caprese Stuffed Portobello Mushrooms are an easy and fresh dish that brings together the classic flavors of Caprese salad with the heartiness of portobello mushrooms.


Ingredients

  • 4 large portobello mushrooms
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the portobello mushrooms and remove the stems.
  3. In a mixing bowl, combine cherry tomatoes, mozzarella, basil, balsamic glaze, olive oil, salt, and pepper.
  4. Fill each portobello mushroom cap with the mixture.
  5. Place stuffed mushrooms on a baking sheet and bake for 20-25 minutes, until the cheese is melted and mushrooms are tender.
  6. Serve warm.
