- 4 large portobello mushrooms
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the portobello mushrooms and remove the stems.
- In a mixing bowl, combine cherry tomatoes, mozzarella, basil, balsamic glaze, olive oil, salt, and pepper.
- Fill each portobello mushroom cap with the mixture.
- Place stuffed mushrooms on a baking sheet and bake for 20-25 minutes, until the cheese is melted and mushrooms are tender.
- Serve warm.

- For extra flavor, drizzle with additional balsamic glaze before serving.
