Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic and sauté until translucent.
- Stir in butternut squash, vegetable broth, ginger, and cinnamon.
- Bring to a boil, then reduce heat and simmer until squash is tender.
- Blend the soup using an immersion blender until smooth.
- Season with salt and pepper to taste.
