- 1 pound Brussels sprouts
- 4 slices turkey bacon
- 1 medium onion
- 3 cloves garlic
- 4 cups chicken broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add chopped onion and minced garlic to the pot and sauté until translucent.
- Add halved Brussels sprouts and cook for a few minutes.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer until Brussels sprouts are tender.
- Blend the soup until smooth, then stir in the heavy cream.
- Season with salt and pepper to taste, and crumble the bacon on top before serving.
Notes
- For a vegetarian version, omit the turkey bacon.
- Consider adding a splash of lemon juice for brightness.
