Brussels Sprout Soup: Easy, Creamy Comfort with Turkey Bacon

Ingredients

  • 1 pound Brussels sprouts
  • 4 slices turkey bacon
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add chopped onion and minced garlic to the pot and sauté until translucent.
  3. Add halved Brussels sprouts and cook for a few minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer until Brussels sprouts are tender.
  5. Blend the soup until smooth, then stir in the heavy cream.
  6. Season with salt and pepper to taste, and crumble the bacon on top before serving.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Consider adding a splash of lemon juice for brightness.
