- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- salt to taste
- pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, add the onion and garlic. Sauté until softened.
- Add the broccoli and chicken broth. Bring to a boil and then simmer until the broccoli is tender.
- Using an immersion blender, purée the soup until smooth. If you don’t have an immersion blender, carefully transfer to a blender in batches.
- Stir in the cheesy goodness and heavy cream until well combined. Season with salt and pepper.
- Serve hot, garnished with the crispy turkey bacon.

- For extra flavor, consider adding a splash of Worcestershire sauce.
