- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 1 can (14 oz) coconut milk
- 2 cups fish stock
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until translucent.
- Add tomatoes, cumin, paprika, salt, and pepper; cook for another 5 minutes.
