Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until translucent.
- Add chicken breasts, cooking until browned on both sides.
- Stir in ginger, bell peppers, paprika, salt, and pepper.
- Pour in coconut milk and simmer for 20 minutes, or until chicken is cooked through.
- Serve hot, garnished with fresh cilantro if desired.
