  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • fresh blackberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla.
  4. Mix the wet ingredients into the dry ingredients until just combined. Stir in the blackberry puree.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Once the cakes are cool, spread whipped cream between the layers and on the top of the cake.
  10. Garnish with fresh blackberries before serving.
