- 2 large sweet potatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- Salt to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and place them on a baking sheet.
- Bake for 45-60 minutes until tender.
- In a bowl, mix black beans, corn, cumin, chili powder, garlic powder, and salt.
- Once the potatoes are done, let them cool slightly before slicing them open.
- Stuff the potatoes with the black bean mixture.
- Top with diced avocado, cilantro, and cheese if using.
- Serve warm.

- For a spicier version, add diced jalapeños to the filling.
