Ingredients

- 2 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 dried guajillo peppers
- 1 dried ancho pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- 4 cups beef broth
- 2 bay leaves
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- In a large pot, heat vegetable oil over medium heat. Add onion and garlic, sauté until softened.
- Add the chopped beef and sear on all sides.
- Blend the dried peppers with beef broth and pour it into the pot.
- Add cumin, oregano, bay leaves, and bring to a simmer. Cover and cook for about 2 hours until meat is tender.
- Remove the meat, shred it, and return to the pot.
- Warm the tortillas, fill them with shredded meat, and serve with cilantro and lime.
Notes
- For spicier tacos, add a few jalapeños during the cooking process.
- Serve with your favorite salsa for extra flavor.
