Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 dried guajillo peppers
  • 1 dried ancho pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups beef broth
  • 2 bay leaves
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add the chopped beef and sear on all sides.
  3. Blend the dried peppers with beef broth and pour it into the pot.
  4. Add cumin, oregano, bay leaves, and bring to a simmer. Cover and cook for about 2 hours until meat is tender.
  5. Remove the meat, shred it, and return to the pot.
  6. Warm the tortillas, fill them with shredded meat, and serve with cilantro and lime.

Notes

  • For spicier tacos, add a few jalapeños during the cooking process.
  • Serve with your favorite salsa for extra flavor.
