- 1 whole chicken
- 1 tablespoon garlic, minced
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lime juiced
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix garlic, cumin, paprika, olive oil, salt, pepper, lime juice, soy sauce, and vinegar.
- Rub the mixture under the skin of the chicken and all over the outside.
- Place the chicken on a roasting pan and roast for 1 hour or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.

- Serve with a side of roasted vegetables or rice.
- Adjust seasoning to taste.
