Ingredients

  • 4 slices turkey bacon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and roast for 45-60 minutes, until tender.
  3. In a skillet, cook turkey bacon until crispy, then chop.
  4. Once cooled, peel and slice the roasted beets.
  5. In a large bowl, combine mixed greens, sliced beets, turkey bacon, feta, and walnuts.
  6. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  7. Toss gently to combine and serve fresh.
