- 2 medium beets
- 4 slices turkey bacon
- 3 cups mixed greens

Instructions
- Preheat oven to 400°F (200°C).
- Wrap beets in aluminum foil and roast for 45-60 minutes, until tender.
- In a skillet, cook turkey bacon until crispy, then chop.
- Once cooled, peel and slice the roasted beets.
- In a large bowl, combine mixed greens, sliced beets, turkey bacon, feta, and walnuts.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
- Toss gently to combine and serve fresh.

- For added flavor, consider adding a squeeze of lemon juice.
