A delicious BBQ chicken skewer salad ideal for summer gatherings.
Ingredients

- 1 pound chicken breast, cubed
- 2 bell peppers, diced
- 1 red onion, diced
- 1/4 cup BBQ sauce
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- Preheat grill to medium-high heat.
- In a bowl, combine chicken, bell peppers, red onion, and BBQ sauce. Mix well.
- Thread the chicken and vegetables onto skewers.
- Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through.
- In a large bowl, combine mixed greens, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together olive oil and lemon juice. Drizzle over salad.
- Serve the chicken skewers over the salad.
Notes
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
