  • 4 large eggs
  • 2 slices turkey bacon

  • 1 avocado, diced

  • 2 whole grain bread rolls

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bread rolls and scoop out some of the inside.
  3. Cook the turkey bacon until crispy, then chop it into small pieces.
  4. In a bowl, whisk together the eggs, diced avocado, turkey bacon, chicken ham, and cheese. Season with salt and pepper.
  5. Fill the hollowed-out bread rolls with the egg mixture.
  6. Place the filled rolls on a baking sheet and bake for 15-20 minutes or until the eggs are set.
  7. Remove from the oven and let cool for a few minutes before serving.
