Ingredients

- 1 pound chicken thighs
- 1 cup basmati rice
- 1 cup chicken broth
- 1/2 cup plain yogurt
- 1/4 cup cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried dill
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine yogurt, cucumber, garlic, olive oil, dill, lemon juice, salt, and pepper to make the tzatziki sauce.
- Coat the chicken thighs with the tzatziki sauce and place them in a baking dish.
- In a separate saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Spread the rice around the chicken in the baking dish.
- Cover the dish with foil and bake for 35-40 minutes, until the chicken is cooked through and the rice is tender.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken in the tzatziki sauce for a few hours before baking.
- Pair with a side salad for a complete meal.
