  • 1 cup basmati rice
  • 1 cup chicken broth
  • 1/2 cup plain yogurt
  • 1/4 cup cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine yogurt, cucumber, garlic, olive oil, dill, lemon juice, salt, and pepper to make the tzatziki sauce.
  3. Coat the chicken thighs with the tzatziki sauce and place them in a baking dish.
  4. In a separate saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Spread the rice around the chicken in the baking dish.
  6. Cover the dish with foil and bake for 35-40 minutes, until the chicken is cooked through and the rice is tender.
  7. Remove from oven and let rest for 5 minutes before serving.
