- 8 ounces turkey bacon
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 16 ounces gnocchi
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add olive oil, onion, and garlic to the pot. Sauté until translucent.
- Pour in the chicken broth and bring to a boil.
- Add the gnocchi and cook according to package instructions.
- Stir in the shredded cheddar cheese and heavy cream until cheese is melted and soup is creamy.
- Season with thyme, salt, and pepper.
- Chop the bacon and return it to the pot. Serve hot.

- This soup can be made ahead of time and stored in the refrigerator.
- Feel free to add vegetables like spinach or peas for extra nutrition.
