- 2 pounds baby potatoes
- 1/2 cup unsalted butter
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon garlic, minced
- Salt to taste
- Black pepper to taste
Instructions
- Wash the baby potatoes thoroughly under running water.
- In a large pot, bring salted water to a boil and add the potatoes.
- Cook for about 15-20 minutes or until the potatoes are fork-tender.
- Drain the potatoes and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic, rosemary, and thyme to the skillet, stirring for about 1 minute until fragrant.
- Add the drained potatoes to the skillet, tossing them in the herb butter.
- Season with salt and black pepper to taste, cooking for another 5 minutes until heated through.
- Serve hot, garnished with extra herbs if desired.
Notes
- For extra flavor, add a squeeze of lemon juice just before serving.
- Feel free to substitute the herbs with your favorites.
