Ingredients

  • 2 pounds baby potatoes
  • 1/2 cup unsalted butter
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash the baby potatoes thoroughly under running water.
  2. In a large pot, bring salted water to a boil and add the potatoes.
  3. Cook for about 15-20 minutes or until the potatoes are fork-tender.
  4. Drain the potatoes and set aside.
  5. In a large skillet, melt the butter over medium heat.
  6. Add the minced garlic, rosemary, and thyme to the skillet, stirring for about 1 minute until fragrant.
  7. Add the drained potatoes to the skillet, tossing them in the herb butter.
  8. Season with salt and black pepper to taste, cooking for another 5 minutes until heated through.
  9. Serve hot, garnished with extra herbs if desired.

  • For extra flavor, add a squeeze of lemon juice just before serving.
