Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 2 tablespoons fresh ginger, minced
  • 4 cloves garlic, minced
  • 1 bunch scallions, chopped
  • 8 cups chicken broth
  • 3 cups egg noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add ginger and garlic, sauté until fragrant.
  3. Add chicken and broth, bring to a boil.
  4. Reduce heat and simmer until chicken is cooked through.
  5. Remove chicken, shred it, then return it to the pot.
  6. Add noodles and scallions, cook until noodles are tender.
  7. Stir in soy sauce and season with salt and pepper to taste.
  8. Serve hot and enjoy!
