Ingredients

- 1 pound chicken thighs, boneless and skinless
- 2 tablespoons fresh ginger, minced
- 4 cloves garlic, minced
- 1 bunch scallions, chopped
- 8 cups chicken broth
- 3 cups egg noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add ginger and garlic, sauté until fragrant.
- Add chicken and broth, bring to a boil.
- Reduce heat and simmer until chicken is cooked through.
- Remove chicken, shred it, then return it to the pot.
- Add noodles and scallions, cook until noodles are tender.
- Stir in soy sauce and season with salt and pepper to taste.
- Serve hot and enjoy!

- This soup can be made ahead of time and reheated.
- Adjust the spiciness by adding chili flakes.
