Instructions

  1. In a large bowl, mix together flour, baking powder, salt, and cinnamon.
  2. In another bowl, whisk together eggs, milk, sugar, and vanilla extract.
  3. Combine wet and dry ingredients until just mixed, then fold in the diced apples.
  4. Heat oil in a deep fryer or large pot to 375°F (190°C).
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. Remove and drain on paper towels.
  7. Mix powdered sugar and milk to create a glaze, then drizzle over warm fritters.
