- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 3 cups sliced apples
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1/2 cup rolled oats
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Mix in the flour, vanilla, and salt until combined.
- Press half of the mixture into the bottom of a greased 9×13 inch baking dish.
- In a separate bowl, toss the sliced apples with cinnamon and brown sugar.
- Spread the apple mixture over the shortbread base.
- Crumble the remaining shortbread mixture over the apples.
- Bake for 30-35 minutes until the top is golden brown.
Notes
- For a more caramelized flavor, add a drizzle of caramel sauce on top before serving.
- Serves well with a scoop of vanilla ice cream.
