- 1/4 cup melted butter
- 1 tablespoon vanilla extract
- 1/4 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
- Combine the wet ingredients into the dry ingredients and mix until just combined.
- Fill muffin cups about 3/4 full with batter.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Allow muffins to cool for a few minutes before rolling in the cinnamon sugar coating.
Notes
- For an extra kick, add a pinch of nutmeg to the batter.
- These muffins are best enjoyed fresh but can be stored for a day.
