Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until smooth.
- Beat in the egg and almond extract.
- Combine the almond flour, all-purpose flour, and salt; gradually blend into the creamed mixture.
- Stir in the chopped cherries.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow to cool on wire racks.
Notes
- For a nutty variation, you can add chopped almonds to the dough.
