Ingredients

- 1 pound chicken thighs, chopped
- 2 cups chicken broth
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 potato, diced
- 1 cup frozen peas
- 1 green bell pepper, chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the chicken and cook until browned.
- Stir in the carrot, potato, and green bell pepper. Cook for 5 minutes.
- Add chicken broth, cumin, and salt. Bring to a boil, then reduce to a simmer.
- Cook for 20 minutes, then add peas and cilantro. Simmer for another 5 minutes.
Notes
- This soup can be served with rice or alone.
- Feel free to add other vegetables based on your preference.
