Ingredients

  • 1 pound chicken thighs, chopped
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 cup frozen peas
  • 1 green bell pepper, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Add the chicken and cook until browned.
  3. Stir in the carrot, potato, and green bell pepper. Cook for 5 minutes.
  4. Add chicken broth, cumin, and salt. Bring to a boil, then reduce to a simmer.
  5. Cook for 20 minutes, then add peas and cilantro. Simmer for another 5 minutes.
